Authentic Biryani Recipe 🍛🔥

Biryani is a flavorful and aromatic rice dish made with basmati rice, marinated meat (chicken, mutton, or beef), and a blend of spices. Here’s how to make a restaurant-style dum biryani at home.


Ingredients

For the Rice:

✅ 2 cups basmati rice (soaked for 30 minutes)
✅ 6 cups water
✅ 2-3 cloves
✅ 2-3 green cardamoms
✅ 1 bay leaf
✅ 1-inch cinnamon stick
✅ 1 tsp salt
✅ 1 tsp oil

For the Marinade:

✅ 500g chicken/mutton (bone-in for best flavor)
✅ ½ cup yogurt
✅ 1 tbsp ginger-garlic paste
✅ 1 tsp turmeric powder
✅ 1 tsp red chili powder
✅ 1 tsp garam masala
✅ ½ tsp cumin powder
✅ ½ tsp coriander powder
✅ 1 tsp salt
✅ 2 tbsp lemon juice
✅ 2 tbsp oil
✅ Handful of chopped coriander and mint leaves

For Assembling (Dum Cooking):

✅ 2 large onions (thinly sliced & fried until golden)
✅ ¼ cup milk + few saffron strands (or yellow food color)
✅ 2 tbsp ghee
✅ 1 tbsp kewra water (optional)


Instructions

Step 1: Prepare the Rice

1️⃣ Boil 6 cups of water with whole spices (cloves, cardamoms, bay leaf, cinnamon).
2️⃣ Add soaked rice and cook until 70% done (it should still have a bite).
3️⃣ Drain and set aside.


Step 2: Marinate the Meat

1️⃣ Mix all the marinade ingredients in a bowl.
2️⃣ Add chicken/mutton and coat well.
3️⃣ Cover and refrigerate for at least 1 hour (overnight for best results).


Step 3: Cook the Meat (If Using Mutton)

1️⃣ Heat 2 tbsp oil in a pot, add the marinated mutton.
2️⃣ Cook on medium heat for 10 minutes, then add ½ cup water.
3️⃣ Cover and cook until tender (40–50 minutes).
4️⃣ If using chicken, skip this step and directly layer it in dum.


Step 4: Assemble & Dum Cook (Slow Steam Cooking)

1️⃣ In a heavy-bottomed pot, grease with ghee.
2️⃣ Layer half the cooked meat at the bottom.
3️⃣ Add a layer of half the rice.
4️⃣ Sprinkle fried onions, saffron milk, coriander, and mint leaves.
5️⃣ Repeat layers with remaining meat and rice.
6️⃣ Drizzle ghee & kewra water for extra aroma.

👉 Dum Cooking:
✅ Seal the lid with dough or a cloth to trap steam.
✅ Cook on low flame for 25–30 minutes (or bake at 180°C for 20 minutes).


Step 5: Serve & Enjoy 🎉
